A classic pudding is a rich, creamy dessert that is smooth and comforting. Here's a basic recipe for a classic vanilla pudding, which can serve as a foundation for various flavors or be enjoyed on its own.
Ingredients:
- 500 ml (2 cups) whole milk
- 100 g (½ cup) granulated sugar
- 3 tablespoons cornstarch
- 1/4 teaspoon salt
- 3 large egg yolks
- 2 tablespoons unsalted butter
- 2 teaspoons vanilla extract

Mix dry ingredients:
- In a medium saucepan, whisk together the sugar, cornstarch, and salt.

Add the milk:
- Gradually pour in the milk, whisking continuously to avoid lumps. Make sure everything is well combined.

Cook the mixture:
- Place the saucepan over medium heat and cook, stirring constantly, until the mixture thickens and starts to bubble. This should take about 5 to 8 minutes. Reduce the heat and cook for another minute or so, stirring constantly.

Temper the egg yolks:
- In a separate bowl, lightly whisk the egg yolks. Slowly pour a small amount (about 1/2 cup) of the hot pudding mixture into the egg yolks while whisking, to warm them up without scrambling them.
- Then, slowly pour the tempered yolks back into the saucepan with the pudding mixture, stirring continuously.

- Continue cooking the mixture over medium heat for 2 to 3 minutes, until the pudding thickens further but does not boil.

Finish the pudding:
- Remove the saucepan from the heat and stir in the butter and vanilla extract. Stir until the butter is melted and fully incorporated.

- Pour the pudding into individual serving dishes or a large bowl. Cover with plastic wrap, pressing it directly onto the surface of the pudding to prevent a skin from forming.
- Refrigerate for at least 2 hours before serving to allow the pudding to fully set and chill.
